Legend tells that at the top of a rock, Saint George would have fought and defeated a Dragon. He became the patron saint of the Frankish knights. Roquende pays tribute to this myth illustrated by the medallion of Saint Georges, celebrated during the World Fair of Paris in 1889.
Vineyard:
Selection of the best grape varieties on several sites in the South of France, in search of the good balance between acidity and maturity of the aromas.
Soil Type:
Clay limestone.
Vinification (Winemaking):
Harvest at night to keep the freshness of the aromas. Pressing done in the absence of air thanks to nitrogen inerting. Alcoholic fermentation carried out between 14°C and 16°C.

Colour: Crisp, light.

Nose: Lemony aromas and notes of freshly cut grass / freshly cut herbs.

Palate: A fresh and light wine. This wine offers a palette of aromas of pears, apples and white flowers and a feeling of roundness and balance in the mouth.

Enjoy it as an aperitif or as an accompaniment to crayfish salad, king crab, spring green asparagus, or lemon chicken.
